Miss Philippines Pamela Bianca Ramos Manalo would be representing for the Miss Universe 2009, the 58th Miss Universe pageant will be held at the Imperial Ballroom, Atlantis Paradise Island, in Nassau, Bahamas on August 23, 2009. Miss Universe 2008, Dayana Mendoza from Venezuela, will crown her successor at the end of this event. 84 countries and territories will compete for the title and the pageant will broadcast live on ABS-CBN on August 24, 2009 (Monday). The presentation show, rehearsals, dress rehearsal and the grand final will take place at Imperial Ballroom, in the Atlantis Paradise Island Resort.

Last August 5, 2009, Philippines four honor guards stood for more than 9 hours (snappy, straight, no food and water, no rest even through rainy day, bumps, dryness on the road and inclines) to escort Former President Cory Aquino’s remains from the Manila Cathedral in Intramuros to the Manila Memorial Park in Paranaque City, which is a 23 kilometer route. The four honor guards boarded the truck at past 11 a.m. when police generals, acting as pallbearers, carried Cory Aquino’s wooden casket out of the cathedral after the more than two-hour Requiem Mass.

They got off the truck past 8 p.m. when they reached Manila Memorial Park where the revered People Power heroine was laid to rest next to her martyred husband, former Sen. Benigno “Ninoy” Aquino Jr. The honor guards were given the highest honor and commendation and a cash of 25,000 pesos each. What they did seem ordinary to us. But try standing up for hours on the truck without moving and you’d see how difficult it was. It’s harder than walking, it’s harder than running, stand in one position for eight hours is a very tough job, however, they quietly did their job.

Ingredients

8 lbs pork shoulder (with skin on)
salt and pepper
cloves of garlic

COOKING INSTRUCTIONS

1. Preheat oven to 425F.
2. Wash meat with water and pat dry with paper towels.
3. Sprinkle with salt and pepper (enough to coat the entire meat once).
4. Make a few slits on the meat and insert garlic.
5. Place in a roasting pan (I used a disposable foil pan) skin side up.
6. Add 1 cup of water.
7. Place pan in the oven.
8. Bake uncovered for 1.5 hours.
9. Turn heat down to 350F. Bake for another 3 hours or until internal meat temperature reaches between 160-175F.
10. Remove pan from oven. Drain meat on a rack then transfer on top of paper towels. Slice meat using a non-serrated, sharp knife. Serve with lechon sauce or vinegar/soy sauce dipping sauce.
