Ingredients
• 1 cup flour
• 3 ripe plantain bananas, peeled and halved lengthwise
• 2 cups cooking oil
• 1 1/2 tsp. baking powder
• 1/2 tsp salt
• 1 egg
• 2/3 cup milk
• flour for dredging
• sugar
METHOD
1. Stir fry ingredients together. Add milk and eggs and beat until smooth.
2. Roll banana slices in flour, dip in batter and fry in hot oil until golden brown. Drain on paper towels. Roll in sugar. Serves 6.
Variation: Maruyang Camote - Use sweet potato slices in place of bananas. About 2 medium sweet potatoes sliced 1/4" thick.
