corn relishIngredients

•1 cup cooked or canned corn
•1 teaspoon salt
•1/2 cup sugar
•1 medium-size onion, diced
•2 teaspoons hot pepper sauce
•1/2 cup apple cider vinegar
•1 medium-size green pepper, diced
•1/4 cup finely diced pimento

METHOD

1. Blend salt, sugar and vinegar in saucepan. Bring to a boil.
2. Add corn, onion and green pepper and boil for 5 minutes. Stir in hot pepper sauce and pimento to taste. Refrigerate. Serve cold.
