corn relishIngredients

• 1 cup cooked or canned corn
• 1 teaspoon salt
• 1/2 cup sugar
• 1 medium-size onion, diced
• 2 teaspoons hot pepper sauce
• 1/2 cup apple cider vinegar
• 1 medium-size green pepper, diced
• 1/4 cup finely diced pimento

METHOD

1. Blend salt, sugar and vinegar in saucepan. Bring to a boil.
2. Add corn, onion and green pepper and boil for 5 minutes. Stir in hot pepper sauce and pimento to taste. Refrigerate. Serve cold.
