•1/4 cup finely minced onion
•1 small bundle or 2 ounces misua (sold in Oriental food stores)
•2 tablespoons vegetable or corn oil
•salt and freshly ground pepper to taste
•1 cup ground pork loin
•4 cups water
•1/4 cup chopped scallions
•3 eggs, beaten
•1 tablespoon finely minced garlic1 tablespoon finely minced garlic
1.Break down noodles into 3-inch lengths. Heat oil in a medium saucepan.
2.Stir fry garlic and onion and then add pork and brown. Add water, salt and pepper.
3.Bring to a quick boil. Slowly pour in raw, beaten eggs.
4.Add misua and simmer for 10 minutes.
5.Serve hot, garnished with scallions. Serves 4.
