The recipes in this cookbook have been so adapted that most of the ingredients
can be obtained at any grocery store. The truly native ones Uke patis and bagoong
are always available at Filipino and Chinese stores. Japanese, Korean, Spanish,
Mexican, Portuguese, Italian and Caribbean stores may also carry many of the
ingredients called for or their substitutes.
The following list is not exhaustive but covers major cities in Canada and the
United States where large numbers of Filipinos live. It was compiled from a
list provided by Commercial Attache Jesus C. Alvaro at the Philippine Embassy
in Ottawa and information volunteered by other Filipinos on their favorite Oriental
food stores.
